Rajasthani Culinary Showcase Returned to Café G, Crowne Plaza Gurugram.

Gurugram’s dining circuit revisited the robust, spice-laden flavours of the desert as Rangeelo Rajasthan made a comeback at Café G, Crowne Plaza, Gurugram, riding on the strong popularity of its earlier run. The festival once again brought the richness of Rajasthani culinary traditions to the forefront, offering guests an immersive experience defined by bold spices, rustic techniques, and time-honoured recipes that celebrated the essence of the region.

We tried the thoughtfully curated spread helmed by Chef Swaroop Rana in collaboration with Chef Sankha Das Mahapatra, and the pop-up leaned confidently into Rajasthan’s time-honoured culinary grammar—where every dish carried depth, patience, and rustic honesty. The slow-cooked meats stood out for their richness, absorbing layers of spice gradually rather than overwhelming the palate.

The Dal Baati Churma emerged as a comforting highlight, with perfectly baked baatis that cracked open to reveal a smoky, ghee-laced core, paired beautifully with the sweet, crumbly churma. The Laal Maas stayed true to its fiery reputation—tender meat simmered in a bold red chilli gravy that delivered heat with remarkable depth and balance.

The Ker Sangri brought an earthy, tangy note to the table, offering a taste of Rajasthan’s desert landscape in its most authentic form. Meanwhile, the Gatte ki Sabzi impressed with its soft gram flour dumplings steeped in a creamy yoghurt gravy, balancing richness with a gentle spice profile.

Overall, the experience went beyond a buffet—it felt like a well-crafted narrative of Rajasthan’s culinary heritage, echoing the opulence of royal kitchens while staying rooted in regional authenticity

More than just a themed spread, the festival tapped into the nostalgia and opulence synonymous with Rajasthani cuisine, offering a sensory deep dive into one of India’s most distinctive and richly layered regional food cultures.

Following a strong response to its debut, the team brought the showcase back with a renewed focus on authenticity and depth of flavour. As Gaurav Apte, Area General Manager, noted, the intent was to celebrate Rajasthan’s rich culinary legacy while delivering an experience that felt both deeply rooted and thoughtfully refined.

Rangeelo Rajasthan is on from April 23 to me May 3, with dinner service beginning at 7 pm.
