The luxury hotel signals a fresh gastronomic direction as Malwankar steps into the leadership role, bringing over 14 years of experience across marquee Marriott International properties. His philosophy blends authenticity with innovation, setting the stage for bold flavours, refined techniques and storytelling on the plate at one of the city’s most prominent hospitality addresses.
In India’s competitive luxury dining landscape, leadership in the kitchen often defines the personality of a hotel. At JW Marriott Hotel Bengaluru, that identity now leans toward ingredient-driven cuisine and experiential dining under Malwankar’s watch. The chef’s journey within Marriott International began in 2007 and has since unfolded across some of the brand’s most recognisable properties, including The St. Regis Mumbai, JW Marriott Mumbai, The Westin Hyderabad Mindspace and Courtyard by Marriott Hebbal, Bengaluru. Each stop shaped his approach to culinary storytelling, where local flavours meet contemporary technique.
Most recently, Malwankar led the kitchens at Navi Mumbai Marriott Hotel as Executive Chef. There he steered both pre-opening and post-opening culinary strategy, crafted forward-looking menus and refined guest experiences through regional narratives plated with modern finesse. The experience strengthened his reputation as a chef who balances operational precision with creative flair, an equilibrium essential to the rhythm of luxury hospitality kitchens
Beyond the pass, Malwankar’s career reflects scale and spectacle. He has curated large-format culinary events, including celebrity weddings, and contributed to high-profile pre-opening task forces across India and Sri Lanka. Over the years, the chef has earned 10 distinguished career awards, recognising his contribution to guest satisfaction, business growth and community engagement within the hospitality ecosystem.
